Tomato rice

Tomato rice is quick and easy to make. The color itself makes it very appealing and the taste..hmmm yummy!

Time taken : 30 minutes
Serves: 3-4
  • 1 1/2 cups long grained rice
  • 1/4 teaspoon mustard seeds
  • 2 red chillies
  • 3 green chillies
  • 8-10 shallots ( small onions)
  • a pinch asafetida
  • 5-6 curry leaves
  • 1/2 teaspoon turmeric powder
  • 4 medium tomatoes
  • 3/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/2 tablespoon oil
Cook the rice and keep it aside.
Peel the shallots and cut them finely.

Heat oil in a kadai/ wok and add the mustard seeds.
When the seeds start spluttering add the onions and fry till they turn golden.
Add the green chillies, red chillies, curry leaves and asafetida in quick succession.
Add the tomatoes, turmeric powder, salt and sugar and cook well till the tomatoes are done, stirring frequently.
Add the cooked rice and stir till all the rice has blended well with the paste.
Serve hot with papad or potato chips.
