Sev Batata Puri

Sev puri is another yummy chat, very famous on the streets of Mumbai. I have made my sev puri with flat puris, very similar to the version of thelawalas (roadside eateries) in Mumbai.One more thing, for chats you don't measure too much in teaspoons and tablespoons..a little bit of eyeballing is required.Just the way the bhaiya (street vendor) on the streets does!







Procedure:

1. To prepare the puris you will need:
  • 1 cup all purpose flour (or maida)
  • 1/2 cup semolina (rava)
  • 1/4 teaspoon salt
  • 1 teaspoon oil
  • water





Combine all purpose flour, semolina and salt in a mixing bowl.
Add water slowly and knead the dough. Make sure it should not be too hard or too soft.
Cover it with a damp cloth and keep it aside for 20 minutes.
Now divide the dough and make small balls.
Roll them with a rolling pin into circles of about 2 inches diameter.Prick them with a fork so that the don't puff up.
Heat oil in a kadai. Drop a small piece of the rolled puri to the oil to see if it is ready. Fry the puris in the oil till they are golden brown on both the sides.
You can make the puris in advance and store them in air tight containers.



2. Prepare the green chutney. 
You will need:
· Cilantro (coriander/ dhania)-1 cup
· Mint -1/4 cup
· ginger- one inch piece
· garlic- 2 cloves
· green chillies-2-3
· a very tiny piece of tamarind
· salt to taste





 Mix all the ingredients and grind to a smooth paste adding very little water. This chutney can also be used in bhel and sandwiches.
3. Next prepare the Sweet chutney
You will need 12-15 pitted dates and Tamarind (about the size of a lemon) soaked in water for about 20 minutes. Grind them into a smooth paste and add water as required. This chutney can also be used for other chats like bhel puri and pani puri.




4.Now to assemble the sev puri you will need:
  • Puris (prepared in step1)
  • potato boiled and mashed/or grated
  • finely chopped onion
  • green chutney (prepared in step 2)
  • sweet chutney (prepared in step 3)
  • salt
  • cumin powder
  • chilli powder
  • chat masala
  • lemon juice
  • fine sev
  • coriander
METHOD:
Place the puris on the plate.
Add the boiled potatoes. Then sprinkle salt, cumin powder, chilli powder and chat masala powder. No measurements..just use your instinct!
Add the onions, green chutney and sweet chutney.
Add some lime juice and garnish with fine sev and coriander.
Serve immediately.
