Palak rice/ Spinach rice

Spinach is a healthy green leafy vegetable packed with vitamins, potassium and iron. There is a lot you can do with spinach. I have decided to make spinach rice today for lunch.



Time taken: 30 minutes
Ingredients:

  •      Palak ( Spinach)- 2 cups
  •      Green chillies-2-3
  •      Garlic -1/2 teaspoon
  •      Ginger grated-1/2 teaspoon
  •      Cumin seeds- ½ teaspoon
  •      Turmeric (haldi) powder-1 teaspoon
  •      garam masala, a pinch
  •      kasoori methi-1/2 teaspoon
  •      1 bay leaf
  •      1 teaspoon lime juice
  •      fried cashews-a few (optional)
  •      Oil
  •      Salt to taste

Procedure:
Fry the onions.
Next add the garlic and green chillies.
Wash and add the spinach.
Add the grated ginger and cook till all spinach has wilted.
Puree it in a mixer or blender and keep it aside.
Heat the oil in a kadai/wok and add the bay leaf and cumin seeds.
Now add the spinach puree, turmeric powder and salt.
Add garam masala and crush the kasoori methi between palm of your hands and add it.
Stir well and add the rice .
Mix properly till the rice is blended with the gravy.
Finish by adding lime juice and fried cashews and enjoy.
This is a great lunch box option!
