Kanda Poha


Kanda poha is typically a Maharashtrian speciality. I have fond memories of having kanda poha during college times. There was a small tapriwala (roadside eatery) near my college. The tapriwala had aptly named his stall " Chan Chavdar" which means delicious delicacies in Marathi.We used to flock around his eatery to have the delicious vada-pav, misal-pav and ofcourse the kanda poha.
Later, I shifted to Pune after marriage. I was working in a software company..and back to another tapriwala who was located conveniently just across the office building.I used to go out along with my colleagues and have the poha there..no matter whether I had breakfast or not!
And even today all of us (including my hubby & kid) love the " kanda poha"..it's something about the magic of the poha (flattened rice) with the fried onions which makes this dish simple yet delectable.




Time taken: 15-20 minute

Ingredients:
  • 3 cups jada poha (thick flattened rice)
  • 1 teaspoon mustard seeds
  • 2 onions
  • 3-4 green chillies
  • peanuts ( a handful)
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • coriander & sev for garnishing
  • lemon ( for serving)
  • oil
Procedure:
Wash the poha in cold water and transfer it to a colander and keep aside.
Heat oil in a wok/ kadai and add the mustard seeds.
Once the mustard seeds start spluttering, add the peanuts, onions and green chillies and fry till the onions become translucent.
Add the turmeric powder and the poha and stir it.
Add salt and keep stirring till the poha is blended with  all the ingredients.
Add the sugar just before switching off the gas and give it a stir.
Serve hot with garnished coriander and sev.
Some people like to add lime juice at the end. I like it, my hubby does not..so just a matter of personal choice!
