Vegetable mint pulav is a dish made out of mixed vegetables, mint chutney and rice, eaten best with your choice of raita (sauce dip made of yoghurt with cucumber or onion or mixed vegetables and spices). This dish is a perfect blend of healthy vegetables coupled with the wonderful aroma of mint and spices. I make it very often as it is very quick and easy to prepare and you can throw in a lot of veggies making it so healthy yet delicious!
· Basmati rice
· Finely chopped onions- 2 medium
· French beans-10-12
· Green peas -1 small bowl
· Green chillies-2
· Ginger- small piece
· Garlic -1-2
· Mint (pudina)- 6-8 leaves
· Black Pepper corns ( kali mirch)- 6-8
· Bay leaf ( tej patta)-1
· Cinammon stick ( dalchini)-1
· Cloves (lavang)-3-4
· Cardamom (elaichi)-1
· Star anise ( chakra phool)-1
· Salt to taste
Make a paste using the ginger, garlic, green chillies and mint.
Heat the oil in a kadai (frying pan/ wok/ non stick skillet) and add bay leaf, cinnamon, cloves, cardamom, black pepper corns and star anise.
Next add the onions. Fry the onions and add the masala paste when the onions caremelize.
Add the carrots, beans and green peas. You may use more vegetables like cauliflower, potatoes and whatever as per personal choice. Add water to cover the vegetables and allow them to cook for 3-4 minutes.
Now wash and add the basmati rice and add some more water and allow the rice to cook. Generally 1 glass of basmati rice will need 2 glasses water. Add salt and cook till the rice is done.You can also add fried cashews to your pulav.
You may also try making pulav in a pressure cooker. You need to be careful about how much water to use. Water that would just cover the rice and vegetables and 2 cooker whistles is good enough.
